Fennel Avocado Smoothie

This week features a refreshing avocado smoothie to

conquer these hot Summer days. Blended with mint, fennel, and coriander you’ll feel yourself come alive to this sensory explosion.

 

Whether you’re a fan of avocados or not this recipe is a must try, especially when you’ve got way over-ripened or far too under-ripened avocados. This awesome fruit plays a pivotal role in creating this smooth and creamy concoction as the base note that intermingles the other ingredients. Due to its mellow tone, the avocado allows for a lot of leeway towards the flavors it will work with.

 

Take this recipe to new heights by subbing in coconut milk or by replacing the mint with cilantro. Better yet use heavy cream and whip it into whipped cream or foam it up with C02 cartridges! Or lastly, turn this smoothie into an avocado panna cotta topped with whipped coconut cream, and fresh blackberries.

So blend it up!

 

 

Fennel Avocado Smoothie 

“Refreshing avocado smoothie fused with mint, fennel, and coriander.”

 

Prep Time: 5 minutes                                        Total Time: 10 minutes                         Servings: 2 

 

 

Ingredients 

 

  • 1 peeled and pitted avocado

  • 1 cup whole milk

  • 1/4 teaspoon dried mint

  • 1/4 cup dried fennel seed

  • 1/4 teaspoon coriander seed

  • 2 tablespoons honey

  • 1 1/2 tablespoons slivered almonds

  • 2 tablespoons shredded coconut

  • 2 tablespoons craisins

 

Directions

  1. In a blender, blend together avocados, milk, dried mint, fennel seed, and coriander seed until smooth.

  2. Top with almonds, coconut, and craisins. 

Notes

  *Swap out the whole milk for Greek yogurt and you've got an exciting salad dressing or dip for vegetables!
