Fresh Fruit Popsicles

The other day, while wandering the aisles of the dollar store, I spotted popsicle molds out of the corner of my eye. Having been twenty odd years since my childhood popsicle making days, I was immediately drawn to the frigid idea. If you're a parent these would make for a great warm weather activity and a no-worry sweet treat made from real fruit with just a touch of sweetener. So get creative, and cool those summer days!

Fresh Fruit Popsicles

“A rainbow of flavor!”

 

Prep Time: 10 minutes                             Total Time: 10 (+freezing)                  Servings: 4

  

 

 

Ingredients:

 

Banana Mango:  ​

  • 2/3 cup banana

  • 2/3 cup mango 

  • 1 tablespoon granulated sugar 

  • 2 tablespoons water 


Kiwi Cucumber:

 

  • 1/2 cup kiwi

  • 1/4 cup cucumber

  • 2 mint leaves

  • 2 tablespoons water

  • 1 tablespoon granulated sugar 

 

Strawberry Chia:

 

  • 1 cup strawberries 

  • 2 teaspoons chia seeds 

  • 1 tablespoon granulated sugar 

  • 2 tablespoons water 

 

Directions:

 

1.  For each flavor, combine all ingredients in a blender and puree until smooth. 

 

2. Fill popsicle molds and freeze until completely firm, about 2 hours.
