Melty Chipotle Chicken Sandwich

Sometimes, I'm in the mood for a sandwich. But I'm not the type for a simple ham and cheese or PB&J despite their, albeit, deliciousness. I want a good, hardy, hot sandwich. One with a toasted, crusty bread holding within it, layers of flavor and texture. Despite being overplayed, I've decided to share my version of the chipotle chicken sandwich featuring a homemade whole wheat loaf (Recipe not included). 

 

 

 

Melty Chipotle Chicken Sandwich

“Melty chipotle grilled chicken on a homemade whole wheat loaf with a zesty guacamole spread!”

 

Prep Time: 15 minutes                             Total Time: 30 minutes                                        Serves: 6

  

 

Ingredients:  

 

  • 2 pounds chicken breast

  • 1 tablespoon Chile powder 

  • 1/4 teaspoon garlic powder 

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon crushed red pepper flakes 

  • 1/4 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • 1 1/2 teaspoons ground cumin 

  • 1 teaspoon kosher salt

  • 1 teaspoon granulated sugar 

  • 2 limes, juiced 

  • 1/4 cup white wine vinegar 

  • 3 tablespoons canola oil

Chipotle Mayo

  • 1/4 light mayonnaise 

  • 1/2 cup Greek yogurt, drained 

  • 2 tablespoons chile powder 

  • 1/8 teaspoon cayenne pepper 

  • 1/4 teaspoon paprika 

  • 1/4 teaspoon ground cumin 

 

Guacamole

  • 3 avocados, mashed

  • 1 bunch cilantro, minced

  • 2 limes juiced 

  • 1/2 teaspoon salt 

 

Additional:

 

  • 12 slices whole wheat bread

  • 1 head butter lettuce 

  • 2 large heirloom tomatoes, sliced 1/8 inch and sprinkled with salt

  • 1- 8oz package shredded 3-cheese blend 

 

Directions:

 

1. For the chicken: In a blender combine the spices, lime juice, vinegar, and oil. Pour over the chicken and marinate for 30 minutes. While grilling, flip every 5 minutes and brush with the left over marinade. 

 

2. For the mayo: in a small bowl, combine the ingredients. 

 

3. For the guacamole: in a small bowl, mash together the ingredients to a slightly chunky consistency. 

 

4. Toast the whole wheat bread and spread the chipotle mayo on both slices. Top with a layer of guacamole, sliced chicken breast, shredded cheese, and sliced tomato. Place in the oven until the cheese has melted, the add the butter lettuce as a finishing touch.
