Strawberry Blast Sugar Cookies

I discovered a bag of strawberry powder in the back of my cabinet and decided to put it to good use. Not only was there enough to make up this batch of cookies but there was plenty more to whip up some strawberry jam to inject right into the middle of these sweet treats. ⁣It's tough to see but if you look closely you can see the jammy goodness between each cookie piece!

Level: Easy

Prep Time: 45 minutes


Granulated sugar


Strawberry powder



Unsalted butter

Granulated sugar



All-purpose flour

Strawberry powder 

Baking powder 

Baking soda


1 c.

1/4 c.

3 Tbsp.

1 T.

1 tsp.


1 c.

1.5 c.

2 E.

1/4 tsp.

3 c.

1/4 c.

2 tsp.

1 tsp.


Jam: Combine the sugar, 1/4 cup of water, and strawberry powder and bring to a boil for 2 minutes. In a smaller bowl, combine the 1 tablespoon of water and 1 teaspoon of gelatin and let it bloom for 5 minutes. Heat the gelatin mixture in the microwave for 10 seconds until a liquid state. Combine with the strawberry mixture and let cool completely. 

Dough: Cream the butter and sugar for 5 minutes. Add the eggs one at a time. Sift in the dry ingredients together to remove any clumps. Mix until just combine. 

Baking: Scoop cookies onto a greased baking pan allowing 1/2-inches between them. Slightly flatten the dough balls and bake at 350°F for 10-12 minutes. While still warm, use a syringe to inject the strawberry jam right into the center of the cookies being careful not to rupture them.


To Serve:

Serve with a glass of milk or alternatively, create a cookie sandwich with whipped cream!


Cooking note:

If the jam becomes too firm, simply warm it in the microwave to loosen it.
